3rd December: Amaretto Sour
No messing around here. Just a classic cocktail that is warming and comforting...on ice!
Our version doesn't use sugar syrup. If you have a sweet tooth please add 10-15ml, but otherwise we think the amaretto itself brings enough sweetness.
Disaronno works brilliantly enough, but you can have fun and make your own, as we've done this year...
Make up a syrup (400ml cup caster sugar, 200ml cup dark muscovado, 500ml water). Bring to a gentle boil & add a small handful of dried apricots, dried cherries and of course a big handful of whole almonds. allow to come to a boil and then cool for 30mins. add 700ml of a good quality clean vodka, 100ml almond extract, a big tablespoon of vanilla extract and a big tbsp of brandy. Strain and pour into a sterilised bottle. The liqueur keeps for ages, but once opened it's best to drink within a fortnight.
Again, like most of our homemade recipes, feel free to experiment increase/decrease ingredients dependant on your tastebuds, it's pretty difficult to go wrong, Just be wary of the sugar content, because too much can spoil, where as too little can always be saved at a later date! Adding bitter dark chocolate, other dried fruits and/or coffee beans make for great twists.

60ml Amaretto | 25ml Lemon Juice | Egg White (optional) | Maraschino Cherry
**All ingredients except the cherry need to be shaken vigorously on ice. Then strained into a short glass with extra ice. The egg white is not essential but creates for a nice frothiness and texture. A Luxardo maraschino cherry to finish.
