1st December: Sloe + Tonka '75
To kickstart our Advent Cocktail Calender, we are doing an incredibly delicious spin on all-time celebratory favourite, the French '75.
Nothing tastes quite like the build up to Christmas than sloe berries. We make our own 10 week infusion (Jensen gin for this year's batch) and add tonka beans (think fruity, spiced vanilla & tobacco), as well as adding coffee, cinnamon & clementine peel to the mix. There are stacks of great recipes online so I won't bore you with a step-by-step, but all I'd recommend is having fun with it, but make the sloes your most prominent element! Oh and go easy on the sugar (you can always add extra to sweeten when serving at a later date).

SLOE + TONKA '75.
50ml Sloe + Tonka Gin | 20ml Fresh Lemon Juice | 5ml Sugar Syrup | Champagne Top
**mix the gin, juice & sugar together on lots of ice. strain into a flute and top and stir in your champagne. lemon slice to finish**
