2nd December: Ginola
The Ginola originates from 2013, when Joe, Toby & myself setup in Newcastle for the Urban Night Feast, a weekend festival of the very best international food & drink.
This was early days for the TGC and a rarer occasion to be non G&T sipping out of season in the Winter themed Boiler Shop venue.
We wanted to strike up the perfect serve, highlighting the fact that the bicycle bar can offer more than just your regular mixer menu, applying flavours to theme, setting and season for each event we do.
With hints of Tottenham, Newcastle and Hawksmoor's 'Shaky Pete's Ginger Brew'...
50ml Beefeater London Dry Gin | 25ml TGC Ginger Cordial | 25ml Fresh Lemon Juice | 2-3 dashes of Lemon Bitters | 150ml Newcastle Brown Ale
**fill a cocktail shaker with your lemon, ginger and gin and lots of ice. soak the ice in the bitters. shake and shake until too cold to hold. pour into a chilled glass to halfway and fill the remainder slowly with NBA. Give it all a good gentle stir. No garnish. We like to add a black & white striped straw**
The key to this serve is the balance between the cocktail mix and the Ale, plus the size of the glass (300ml is perfect) . If your glass is too large and you top with too much beer, the drink becomes too watery and lacks the ginger bite. You want around 50:50.
