The joy of punches is that there are no rules. With the ingredients below all we'd suggest sticking to is for every part soda water, you equal with some fizz...your punch should be punchy and it's Christmas after all.
POACHED PLUM PUNCH

To get the most out of your plums, we suggest a long gentle cook in a bit of sugar and water, until the fruit is really soft. Feel free to add any mulled spices, as they combine well with plum, though there is often so much mulling and spicing going on this time of year, we recommend keeping this quite fresh, but with just a bit of star anise, hibiscus (using a tea infuser!) and vanilla. Throw the whole cooled contents of the pan into a punch bowl or jug (except the hibiscus tea, remove the strainer), keep it rough to get the most impact then add lots of ice and layer in all your other ingredients. Stirring occasionally as you go and topping up with the fizzes and gin as you go. Ladle out and enjoy amongst friends and family.
